Complete mix to produce bun with nicely cracked crust with chewy mouth feel.

Wheat, Wheat Products, Milk, Milk Products, Sulphites
i. Mix in mixing bowl and beat for 1 minute at 1st speed (slow).
ii. Scrape down the mixture.
iii. Beat the ingredients further for 3 minutes at 2nd speed (medium).
iv. After that, mix for another 1 minute at 1st speed (slow).
v. Allow the dough to rest for 10 minutes.
vi. Scale and mould 40gms of dough into desired shape.
vii. Bake the bun at 185°C ± 5°C under below conditions:
- during first 5 minutes, bake with steam
- then continue bake for 25 minutes bake
Modified Starch, Wheat Flour, Sugar, Non Fat Milk Solids, Salt, Leavening Agent (E450, E500), Starch, Mineral Salt (E170)
i. Mix in mixing bowl and beat for 1 minute at 1st speed (slow).
ii. Scrape down the mixture.
iii. Beat the ingredients further for 3 minutes at 2nd speed (medium).
iv. After that, mix for another 1 minute at 1st speed (slow).
v. Allow the dough to rest for 10 minutes.
vi. Scale and mould 40gms of dough into desired shape.
vii. Bake the bun at 185°C ± 5°C under below conditions:
- during first 5 minutes, bake with steam
- then continue bake for 25 minutes bake
